Spaghetti Melon
Have you ever heard of a Spaghetti Melon or Spaghetti Squash?
I hadn't until recently. But I'm happy to have discovered them at my local fruit and vegie shop.
They are easy to prepare. You can just put it whole into a big pot and boil it for about 30 minutes.
Or I prefer to roast it in the oven.
First I cut it into quarters and scoop out the seeds. Give it a quick spray of olive oil, a sprinkle of salt and pepper . Pop it into the oven to cook at about 200 degreesC
30 - 40 minutes later..
We love it with a Bolognese sauce, or tossed with basil pesto and feta cheese.
Keep an eye out for one, they're worth a try.

We had one years ago, several in fact, when my father grew them. The family voted no more of them. I should try one now I'm big and (sorta) grown up.
ReplyDeleteToss the hot shreds with a bit of Romano cheese, fresh or dried oregano, a bit of butter and some S&P. makes a great side dish. Add some shrimp or chicken and it can be a main dish.
ReplyDeleteMy Mum used to serve us up spaghetti squash but we weren't keen on it as kids. My sister and I like it now though.

ReplyDeleteI'll be looking for one today when I pick up my chickens (I get 4chickens every month from one of the farms nearby). I just like knowing the chicken was raised outside and enjoying life before I feed it to my family. They have a produce stand so I'll ask if there's any of these on any nearby farms. We have been trying to reduce our gluten intake and I feel so much much better since making the switch. This would be a nice alternative to spaghetti noodles. I noticed yesterday that our cat's food has gluten as one of the ingredients. I bet that can't be good for them either. Food is such a complicated matter these days! Thanks for sharing this:)
